Food is any substance consumed to provide nutritional support for the body, but it is also tradition,
commerce, recipes and ingredients as well as being a symbol and metaphor and it is a topic that we can
investigate through the documents conserved in the State Archives of Venice. There are many possibilities
to discuss food from a historical point of view; we have chosen to pursue four different paths, from the
Middle Ages to the 20th century, to put our carte (this is a play on words: carte in italian means papers and
also cards) on the table:
